We created this year’s wassail by aging a limited amount of Single Engine Red in Jack Daniels barrels for two months.  The beer was then transferred back into a tank containing green apples, local high-bush cranberries and mulling spices.  A month later the beer was moved to kegs, in which it was naturally carbonated with a German lager yeast strain.  A little late for the holidays, perhaps, yet still a beer to celebrate!
